Anna Martin: From the New York Times, I'm Anna Martin. This is Modern Love. And today I'm talking to chef and cookbook author Carla Lalli Music. Carla loves food. She's been a line cook, a home cook, an on-camera cook in Bon Appétit videos that did crazy numbers. She developed a fan base of people who really liked her vibe. Her recipes were accessible and flavorful. And when you watched her in the zone making something delicious, she really looked like she was having fun. But while her career was taking off, behind the scenes, Carla felt her connection to food slipping away. Then her 24-year-long marriage ended. And after decades of feeding other people and teaching other people to feed themselves, Carla had to figure out what truly fed her. As a newly single person, she poured all of this into her new cookbook, which is honestly sort of half cookbook and half memoir. It's called Food Is a Feeling. Today, Carla tells me about the specific pleasure of following her own cravings and why tomatoes are the sexiest food. Carla, welcome to Modern Love.

Carla Lalli Music: Wow. Um, yeah. As a younger kid, I grew up in a house with an amazing cook for a mom. One of my most beloved memories is a piece of hot toast with a shellac of butter that is still melting. So, it's like partially melted, but you still see there's more butter than can be absorbed, pooling in the crannies of the toast. And this was on like a sick day when I was home from school. Um, and I don't remember the part about being sick at all. I only remember the toast that she brought into my bedroom. And just we always had room temperature butter on the counter always. And growing up, you realize like that's that's why the butter was always perfectly melting cuz it was ready to pool in your toast. But yeah you're just eating for pleasure and for sustenance and fulfillment and so that's that's what I remember just being able to eat something like that.

But so when I started cooking for myself, I knew good food. I just didn't know how to get there. So like I knew when it wasn't right, but I didn't know how to fix it because I didn't have the grammar of cooking yet.

But also feeding a baby, nourishing this child with your body. And I took on this very motherly role of like, I have to take care of everyone and I have to be the one to feed everyone. And so I really took on the cooking in the household to the point where I wouldn't let anyone else cook.

Carla Lalli Music: Yes. When cooking becomes your full-time, high-pressure job, the nature of it shifts. In the test kitchen, you are constantly developing, testing, producing hit recipes; and on camera, you have to perform and be "on." Every dish is dissected intellectually: Is there enough salt? Is the acid balanced? Are the instructions clear for home cooks? By the time I got home, I was completely depleted. I had zero sensory desire left for food. Food became a to-do list, a set of deliverables, and I completely lost touch with eating for simple joy.
